According to Traditional Chinese Medicine, all foods are under two categories: “cool” and “hot” or “yin” and “yang”.
Crabs are “cool”(yin) foods, and ginger and brown sugar are “hot” (yang)foods. Chinese drink brown sugar tea when they eat crabs to reach a balance of “cool” and “hot” or “yin” and “yang” energy.
Crab guts, gills, heart and stomach should not be eaten. Where are the locations?
Steamed Dungeness crab:
Brush the crab all overPlace the crab in a plate, add ginger slices 15g and cooking wine 1 tablespoonBring a pot of water to a boil first, then steam the crab for 20-30minsBrown Sugar Ginger Tea:
In a pot, add water 1L, ginger slices 50g and brown sugar 3 tablespoonsBoil for 30minsCrab Dipping Sauce:
In a bowl add : minced ginger 20g, light soy sauce 2 tablespoons, vinegar 1 tablespoon, brown sugar 1 teaspoon, and steamed crab juice accumulated in the plate 2 tablespoons, mix well螃蟹性寒凉,而姜和红糖性温。吃螃蟹的同时喝红糖姜茶能中和一下螃蟹的寒凉之气。
螃蟹的肠,胃,心,腮是不克不及吃的。它们在哪呢?
清蒸瑰宝蟹:
把螃蟹全身洗擦洁净螃蟹放入盘中,加姜片15克,料酒15ml烧开一锅水,再放入螃蟹蒸20-30分钟就行-了红糖姜茶:
锅中加水1000ml,姜片50克,红糖50克加盖煮30分钟螃蟹蘸料:
碗中加姜末20克,生抽30ml,醋15ml,红糖5克,和蒸螃蟹时盘中积的汁30ml,拌匀备用回帖
蒸螃蟹,要把螃蟹 肚皮朝天 摆放,汁水蟹黄才不会流出来。

海边的人蒸熟螃蟹有两个要点,一是肚皮朝上,二是不加水或只加特少的水,干烧。
