When I was home schooling, a way that I survived was by cooking as little as possible. Don't misunderstand me, I enjoy cooking, and my family has always enjoyed the dinners I provide. We ate every meal with each other as a family, at the dining table every night. However, my plan was to prepare dinner as little as possible.Freezer cooking, food preparation in big amounts less often, grew to be a standard. While Icould not cook as little as once a month, as quite a few books recommend, I did do large-batch cooking every couple of weeks. It really helped me provide for my terrific family while cooking less often.The books were basic and straight-forward, nothing complicated, and offered good instructions on the way to take my ordinary home-cooking and change it for freezer cooking. Should you pick up the books, you can just about prepare your complete holiday meal in advance, and have a significantly more peaceful family celebration!Another strategy for cooking less often is actually a standard household joke around here. I depended on Costco. Costco lasagna, salad mixes... See, I am not overly uncomfortable to admit it! I am actually being completely sincere here! My best meals have come from Costco! Especially as the kids got older, and their pursuits took us away from home more regularly, I started to depend heavily on their meals. Unfortunately, I can not do this as much anymore. You aren't going to believe this, but when you don't have kids at home, it is easy for the Costco-sized chicken to get a freezer burn well before you can use it all. I am not joking.My kids are cooking on their own in college now. They routinely shop at Costco. They put meals in the freezer at the beginning of the week. They can cook for on their own and earn great grades, because they have learned to cook as little as possible too!My apologies to all my friends who grind their own wheat and cook organic regularly. I hope you will still love me!
