There are three mainreasons why modern equipment used by butchers is safer and more effective thanthe old and out-dated machinery. These three reasons are that they are safer,cleaner, and faster. The newer equipment is much safer than the old. First offold butcher equipment did not have any hand guards on the saws or grinders. Many butchers losttheir fingers due to not paying attention and accidentally cutting one off. Onthe newer machinery it is much more difficult to cut off any appendages. Thenewer machinery also has emergency shut off buttons or switches. This meansthat if something gets lodged or stuck in one of the machines the butcher caneasily shut the machine off. The older equipment was much harder to shut offand if you got your hand stuck in a meat grinder you could easily have lost anentire hand. The newer machines are also updated with a breaker that prevents ashort. This means that when a short happens in the plug that it is plugged intothe machine will not burn out. Burn out means that the machines internalelectrical wires get so hot that they melt, when these wires melt the cease towork. The new machines also come with an emergency shut off that activates whenthe machine gets too hot. This also avoids the machine from burning up. Thesecond reason why the new equipment is better than the old is because of howmuch cleaner they are. In the old equipment cleaning and fixing the machineusually requires the disassembly of the entire machine. Because of this factmany butchers never cleaned the entire machine, which can cause diseases and germsto grow. The newer equipment is easy to clean. The final reason whythe equipment is better is because it is faster. Most of the newer equipmentyou can just set it on a specific speed and it instantly will cut whateverlength you need the meat to be. When dealing with the old machinery you had toslice the meat as good as you could, and as straight as you could. The newequipment is safer, cleaner, and faster and that is why butchers use the newequipment today.
